Fresh Salmon cured with lemon zest, and fresh dill  thinly slices and wrapped in a crab meat and cream cheese  Garish with tobiko caviar and seedless cucumber chips Sundried Tomato and Puna Goat Cheese Wonton   with Fresh Mango salsa

Fresh Ahi Katsu with Tomato Mango Salsa
Fresh Ahi wrapped with nori and breaded with breadcrumb deepfry quickly so still raw in the middle, serve in a chinese spoon with fresh mango salsa and wasabi curry sauce 

Roasted Butternut Squash and Lobster Bisque Shooter

Chicken Satay with Thai Peanut Sauce

Grilled breast of chicken on a bamboo skewer, serve with Thai peanut sauce

Organically Grown Big Island Rainbow Greens with Kataifi Prawn
An enticing medley of fancy fresh  garden greens to include: garden greens to include:  arrugula,   radicchio, bibb, Manoa Lettuce, lollo rosso, oak leaf and frisee. Accompany with Japanese cucumber, roasted beet, candied walnuts yellow and red tear drop tomatos and Fried Kataifi Prawn. Served with Tangerive Vinaigrette.

Roasted Chicken with Mushroom & Leek Gravy
Whole roasted chicken with garlic, onions, ginger and shoyu served with sautted mushroom leek gravy                    

Stir-fried Shrimp with Garlic Pepper and Maui Onion

Grilled Filet Mignon
Choice grade beef tenderloin, center cut, grilled to pefection slices and serve with Merlot Demiglac. Garnish with fresh herbs                    

Grilled Fresh Local Fish
Fresh local fish filet, season with Kona sea salt and pepper serve with lobster reduction and garnish with Italian parsley .              

Vegetarian Stir-fried with Tofu
Fresh sugar snap peas, baby corn, tofu and red bell pepperlightly saute with oyster sauce, kona sea salt and black pepper. Mashed Potato, Rice.
